I have been a very naughty trainer the past couple months.  Not only have I not been blogging, but I also have not been eating low-calorie through the holidays.  Like most people I over-indulged and gained some weight.  I would love to lie to you and say I followed all my own advice, worked out everyday, and watched my portions.  I must confess.  I did not.

Now I am in total detox mode.  Don't jump to any conclusions!  I am not getting a colonic or doing a colon cleanse.  By "detox" I mean that I am in diet overhaul.  You might be thinking this is just some weird New Year's resolution.  It's not.

I actually haven't been feeling very well the last couple months.  I thought I was just getting older and entering perimenopause.  I have had symptoms of insomnia, fatigue, anxiety, mild depression, hot flashes, night sweats, intolerance to cold, low body temperature, joint pain, hypoglycemia, etc.  After doing a lot of research on the internet I discovered I have numerous symptoms of adrenal fatigue.  Symptoms that I thought were totally unrelated might have to do with the impact that stress and diet have on my adrenal glands.

I must inform you that adrenal fatigue is not widely recognized as an actual diagnosis by the medical community.  However, considering I have had a lot of the symptoms of this so-called condition I decided to research more about it.  I found a website for Dr. Lam in California.  He has a lot of interesting things to say on the subject of adrenal fatigue.  He treats patients individually based on his/her hormonal imbalance.

Before rushing off to get expensive supplements and bio-identical hormone replacements, I decided it would be wise to save my money by implementing a few changes first.  Dr. Lam makes a lot of recommendations regarding diet.  You can read his Detox Diet Protocol on his website.  He recommends making lifestyle changes to your diet over the course of 12 months.  There is no better time than January to start.  In summary, these are the following changes that he recommends making slowly over the course of a year:

1. Decrease in fat intake
2. Decrease desserts, candies
3. Increase vegetables and fruits intake
4. Use whole grain products
5. Reduce milk and dairy products
6. Cut down on eggs
7. Decrease meat intakes
8. Stop using processed meats
9. Cut down on coffee, tea and cola beverages
10. Cut down on alcoholic beverages
11. Drink 8 glasses of water a day
12. Cut down on snacks and between meal eating



I have implemented a lot of his suggested changes to my diet over the past four days.  Surprise, surprise!  I already feel a lot better.  I am making the changes a bit faster than he recommended.  On day three I had a wicked headache, but that was it.  Now I feel great, and I have lost 2 lbs (probably water weight, but I'll take it!).  I cannot say that giving up some of my favorite things has been easy.  It has actually been really hard, but I keep reminding myself that I am feeling better. 


I would be remiss if I did not divulge that I have also made additional lifestyle changes to make the whole process easier.  For stress release I have been doing several of these things each day:


1.  Epsom Salts Bath at night to wind down
2.  Drinking Celestial Seasonings Sleepy Time Tea (Chamomile) to help me fall asleep
3.  Playing the Hypnosis Customizable Pack iPhone App to help me fall asleep
4.  Relaxation Yoga
5.  Cardiovascular Exercise to wake-up (instead of my Starbuck's Espresso & Cream)
6.  Subbing Green Tea for Coffee (less caffeine)

It has only been four days so I could be experiencing a placebo effect.  I truly hope it all lasts.  My energy and motivation is back up.  I am sleeping quite a bit better.  Most importantly, I feel happier, healthier, and calmer.

350 Calorie Gluten Free Veggie Quesadilla

  • Calories: 350.2
  • Fat: 15.6g
  • Carbohydrates: 41.3g 
  • Fiber: 8.0g

Ingredients

2 Soft Corn Tortillas
1/4 cup Kuner's Refried Black Beans with Lime Juice
1/4 cup Colby Monterey Jack Cheese, Shredded
1/3 cup Bird's Eye Ultimate Southwest Blend (frozen corn, onion, black bean, and poblano pepper mix)
2 Tbsp. Sour Cream
2 Tbsp. Pico de Gallo
Cooking Spray

Directions

The first step is optional. I spray each side of the tortillas with cooking spray. Then place the tortillas on a cookie sheet. Broil them on high for 1 minute on each side in the oven to soften them.

Next preheat the oven at 350 degrees. Spread the re-fried black beans evenly on each tortilla. Be sure to coat close to the edge of the tortilla.


Next top each tortilla with the colby jack cheese. Only 1/4 cup!  Make sure you measure it or it won't be a 350-calorie quesadilla!


Microwave the frozen Southwest blend for 30 seconds to thaw/heat the vegetables. Drain and add to each tortilla.

Bake each tortilla open-faced in the oven for 10 minutes until the cheese is melted. Next broil them on high for 2 minutes until the cheese is slightly browned for added flavor. Make sure you keep an eye on them so that the tortillas don't burn. Then flip one tortilla on top of the other and cut it into quarters. Garnish with the sour cream and pico de gallo.

Serving Size: 1 quesadilla

550 Calories & Under at Applebee's

As research for the book I am writing, I tried the Garlic Sirloin off the 550 Calorie & Under Menu at Applebee's last night for dinner.  I must say it was delicious.  However, one of my clients had warned me that he didn't really buy that those entrees are actually under 550 calories.  Now I can see why.  The caramelized onions underneath the steak were really greasy, delicious, but greasy.  I would also say that 7 oz. of steak is a hefty portion for someone on a diet regimen.  Applebee's claims in their nutrition facts that their 7 oz. House Sirloin is 250 calories.  However, I looked up  7 oz. of lean broiled sirloin on CalorieKing.com, and it showed that size portion would be 373 calories. Not cool.

I have a more positive take on the sides.  As you can see from my pic, the portions of the potatoes and the portabella mushroom with creamed spinach are small.  Kudos to Applebee's on that.  I'm persuaded to believe the sides were actually low-calorie.  The potatoes tasted more like butter than herbs, but at least there wasn't a large portion.  They tasted like they had been boiled, and they were not greasy with oil.

With my client's opinion in the back of my mind I saved roughly half the steak and onions.  After looking up the facts today I am glad that I did that.  You can see some of the remaining grease on the plate.


I would also like to point out that Applebee's does post the following disclaimer on their website:

"Variations in ingredients and preparation, as well as substitutions, will increase or decrease PointsPlus™ values and any stated nutritional values, such as calories."

Taking the nutrition facts posted on the Applebee's website with a grain of salt, here are the calories on their 550 calorie and under entrees:

Applebee's also has a Weight Watchers PointsPlus™ menu which features low-calorie entrees as well.  Personally I think they should just combine the two menus and tell us both the calories and the points.  The menu at the Applebee's I went to listed 550 calorie entrees and Weight Watcher's entrees on two totally separate pages.  It probably has something to do with their agreement with Weight Watchers.  It would be nice if both menus were on one page.  Anyway, here are the calories and points on those entrees:

To sum up I would definitely order the Garlic Sirloin again.  It was delicious, and I appreciate that Applebee's is trying to offer some healthier options.  The next time I will probably skip the onions altogether.  They seemed to be the source of the grease.  Now if you will excuse me, there is a leftover steak with my name on it.  Lunch?  Yes, please!

Asparagus Wrapped in Prosciutto with Balsamic Glaze

I am re-posting this link today because of a conversation I had with a checker at Trader Joe's (love that place!!!).  I made the recipe today minus the prosciutto, because I am trying to go pescatarian (boo!).  We shall see how long that lasts.  (Pssst!  I ate a piece of chicken last night.  Don't tell anyone.) 

My lovely, fellow blogger, Kelly at Eat Yourself Skinny was kind enough to let me guest post my asparagus recipe on her site a little over a year ago.  While you are redirected to her site you must check out all her awesome recipes.  She's a blogger after my own heart.  She even lists recipes by points for all of you WW enthusiasts. 

On to other news, I am continuing to work on my guidebook about what to eat when you eat out at chain restaurants.  I'm beginning to taste the end of this decade long two-year project.  God willing, I should have it done by December.  Don't worry!  Even though I am pretending to go going pescatarian I will have plenty of beef/pork/poultry options in the book.  I might go back to being a raging carnivore within a week, so don't hold me to the pescatarian thing.  I'll keep you posted.  In case you don't know what pescatarian means you can read all about it on Wikipedia.  I'm not trying the diet change to be pretentious or holier than thou.  I'm merely trying it, because it's considered a heart-healthier diet. 

I watched the documentary Forks Over Knives on Netflix, and it inspired me to reduce my meat intake.  I highly recommend watching it even if you are a carnivore that salivates at the mere mention of meat like Pavlov's dog salivates at the bell.  If you watch it and still want your meat, then I certainly won't blame you.  You'll get no judgement from me, because it will be a hot day in Antarctica before I give up cheese and eggs.  The video is still an interesting watch without being super preachy like some other documentaries concerning meat consumption.  In addition, it is loaded with scientific research.

This isn't really an animal rights kind of issue for me.  (Although I think it would be hilarious if animals had the right to vote or run for congress.  Oops!  Forgot it's a bunch of donkeys and elephants.  My bad.)  Even if I succeed at going pescatarian I'm never going to stop wearing leather.  Fish skin just isn't fashionable.  Eel skin is okay but kind of creepy.  I own four leather jackets, and I will continue to wear them with pride.  They match my leather handbags, belts, and shoes.  Plus one of the jackets makes me feel like Joan Jett.  That's one feisty, rock n' roll chick.  That never goes out of style.  I plan on wearing that jacket far past my prime.  Someone will have to pry it out of my cold, dead hands even if I live to be a hundred.  I hate to belabor the point, but I love that jacket. 

Now that I wouldn't shut up about the jacket I suppose I should show you a picture.  It's only fair.



While I'm on the subject of all things me, I must tell you that I have gone ginger.  That's right, I'm a redhead now.  It's more auburn than fire-engine or carrot top.  Bye, bye blondie.  Thanks to Dalton at Roca Salon for holding my hand through the transformation.  He is some sort of mad scientist genius with hair color.  No regrets, buddy!  I'll update my profile pics on all my social media when I get a chance.

A recent study in the journal of Medicine & Science in Sports & Exercise found that short bouts of exercise   can be just as effective in burning calories and improving health as getting it done all at once!

If you are short on time ( as we all are these days!), don't think that you have to do 30-45 min. consecutive workout sessions to get the benefits you want!

BBQ Beef Shepherds Pie

 Did you know that before I started blogging 3 years ago, I'd never eaten shepherds pie?  Now I would say that it is one of my favorite meals.  I love putting meat on top of potatoes, so naturally potatoes on top of meat is a good idea.   The recipe below is for a big batch of the meat.  Feel free to reduce it if you'd like but I like to make a lot and eat it throughout the week or freeze it for another meal. This freezes beautifully.  You're free to add whatever veggies you fancy, I would have liked peas in it but didn't find any in the freezer. So I added the 1/2 bag of green beans on the top shelf that has been there for practically forever. You know the ones.  I loved all the veggies!  The more the better! I wasn't sure how the flavored mashed potatoes would be with these flavors but it was wonderful and the flavors were perfect. 





BBQ Beef Shepherds Pie
Adapted from Our Eating Habits

  • 2 1/2  lb lean ground beef or ground turkey
  •  16 oz. corn, frozen
  •  1 onion, chopped
  •  1 red pepper, chopped
  •  1 cup green beans, frozen (or any desired veggie)
  • 2 (4 oz) can chopped green chiles, undrained
  • 1 1/2 cups barbecue sauce (you might need more)
  • salt and pepper to taste
  • 1 1/2 lb baby red potatoes, unpeeled
  • Butter and milk, for mashing potatoes
  • 1/4 cup sliced green onions (about 4)
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp ranch dressing
  • 4 slices bacon, cooked until crisp and crumbled
  • 1. Cook ground beef in large skillet until browned, drain. Add onion and red pepper and cook for 4 - 5 minutes. Add corn, green chiles, BBQ Sauce and salt and pepper. Bring to a boil. Reduce heat to low, continue to heat on low until potatoes are done.
    2. Cook potatoes until tender in boiling water. Drain and mash with butter, milk ans salt and pepper. Stir in green onions, cheddar cheese, ranch dressing and bacon.
    3. Scoop meat mixture on to plate and top with potatoes.

    My first daycare child arrives bright and early at 5:25 in the morning.  Wait, it's not bright at all. In fact, it's pitch dark.  It feels like the middle of the night when the alarm goes off at 5:01 every morning. 

    I am not a morning person.

    He is a good little boy and we get to sit and snuggle for almost 2 hours before the other kids come and my kids wake up.  I always wake up cold, so we'll snuggle up with my electric blanket and of course, I need something warm to drink.   Andy will drink his cup of milk while I drink my hot apple cider, tea or latte.  This time of season, pumpkin lattes are my favorite!

    Every day I navigate a parking garage.

    Round and round I go until I see an open spot, excitement surges as I slow up to swing in...

    ..then...

    Bah! Taken.

    Without control my natural thought is "I hate you midget car!"

    I have mixed feeling about sharing this, because I find it to be overly aggressive, inappropriate, and I'd like to think... a bit out of character for myself.

    Yet every. single. time. I see one of those smaller-than-usual cars, creeped up into a normal-size spot, I feel disappointed... deceived....disgusted...and that exact thought automatically rants in my mind (sometimes even under my breath).

    I feel confident that little car is snickering, with its high pitch laughter, as it watches another car mistakenly think it has found an open parking spot.

    I then spend the rest of my garage parking experience (at least 3 more levels) feeling guilty for my irrational hatred and harsh reaction towards those cars.

    ...until I see one again, maybe on the road... maybe in a commercial...maybe in a normal-size parking spot hidden by a normal-size vehicle....and my eyes automatically squint, my jar automatically clinches...and my uncontrollable response is..."If you don't have anything nice to say don't say anything at all."     I was reading Veronica's blog and found out that she started participating in Foodie Penpals.  Apparently this has been going on for about a year but I've never heard of it. Since then, I've noticed it on several other blogs.  What kind of blogger bubble have I been living in?
    Foodie Penpals was started by Lindsay from The Lean Green Bean, it is a program that connects bloggers and blog readers through the gift of food. It’s a fun program that allows you to meet two new “foodies” each month … you should give it a try!


    The fun part is figuring out what to give your Foodie Penpal.  I gave my penpal, Miranda, foods that I like from the farmers market.  Spaghetti squash, chocolate zucchini bread, pretzel roll and hot pepper jam. 
    I received a package this month from April from The April Bake. I loved getting a whole box of goodies in the mail. I was shocked how much she was able to get with a small box and a $15 budget.
    First up - she knew I was gluten free so she gave me these gluten free pretzels.  This was PERFECT as I was out of crunchy GF snacks.  We made Peanut Butter Dip and I enjoyed  these with it!
     It's football season!  USC is the popular college team where April lives so she sent me some football related items.  I loved this cherry flavored popcorn with the USC colors!  The kids loved it too! 
      I got a kick out of the USC Gamecock Sucker.  I can just picture the kids there saying, "Mom, can I have a cock sucker?" 
     I love, love, love almond butter!  My son and I split this little package of Maple Almond Butter. Jacob put his half over a waffle and I ate mine with the GF pretzels.  
      The salted peanuts lasted all of 15 minutes.  The kids got a hold of them and gobbled them up.  I did manage to eat a few. 

    I loved the macaroons.  Super tasty treat!!
      I opened my package, photographed everything and then went off to an exercise class. I came home to find the bowl of these sports themed chocolate gone, but for one.  Chocolate; I should have guarded it better!  :-)
      This package of red curry cubes was interesting. I wasn't sure at first what to do with them.     I've met many food bloggers through The Secret Recipe Club.  Some have been assignments, some from the recipes posted on the blog hop and others from the comments left on my blog.  I've been visiting Daniel's blog The Haggis and the Herring for several months now. He leaves comments on practically all of the Secret Recipe Post which I admired quite a bit. 

    A couple of weeks ago Daniel died.  His wife left an amazing eulogy on his blog. Some members of The Secret Recipe Club are paying tribute to Daniel by having a special day of posting from his blog.



    I just re-read the eulogy and as I type this I am crying.  I didn't know Daniel personally, so why am I so emotional about this?  While I didn't know him, we have a lot in common; three children, a loving spouse and a food blog.  I'm crying because I am reminded how the time with our children is so incredibly precious.  That time could end at any time.  I am crying because no child should have to grow up without a father. I look at my children and feel the ache inside if that were to ever happen to them. I am also emotional and so grateful for my relationship with God and the knowledge that His purpose will be realized so soon. 

    Tonight I am going to hug my children just a little bit tighter and a little bit longer.  I am also going to remember the important things in this world and think about the little things that we take for granted each day.  So much time is wasted doing stupid things.   



    Rhubarb Curry Chicken
    Adapted from The Haggis and the Herring

    2 tbsp oil
    1/2 tsp. salt
    1/2 tsp. red pepper flakes
    1 tsp. coriander
    1 tsp. cumin
    1 tsp. giner
    1/2 curry cube or 2 tsp. curry
    1 small onion, chopped
    1 cup white wine
    1/2 lb. rhubarb, chopped
    2 tbsp. sugar
    2 lbs. chicken breasts or any chicken pieces
    Salt and pepper
    1/2 cup brown sugar

    In a medium sauce pan, heat 2 tbsp. oil over medium heat and saute onions for 2 minutes.  Add 1/2 tsp. salt and red pepper flakes, coriander, cumin, ginger and curry cube; saute for a minute.  Add onion and cook for 2 minutes, stirring occasionally until onion softens a bit.  Add wine, sugar and rhubarb, bring to a boil, then cover and cook 10 minutes over medium heat.  Stir, then re-cover and cook 10 minutes more until rhubarb has broken down into a sauce.

    Meanwhile, add a bit of oil to a pan and heat.  Season chicken with salt and pepper.  Place chicken in pan and brown on both sides. 

    Place chicken into a greased 9 x 13 in. baking dish and cover with rhubarb sauce, sprinkle with brown sugar.  Place baking dish into oven and bake for 30 - 40 minutes.
